Summer Tomates
If you read my “Garden Inspiration” blog, you know that we have a garden on our property which I have nothing to do with…other than Jenna surprises us with these beautiful baskets of fresh veggies. Last week we received yet another bountiful basket of goodies! Amongst other yummy items were some gorgeous red ripe tomatoes.
Like many adults I know, I was not a tomato eater as a kid. I of course enjoyed lots of ketchup—especially to cover up the taste of the fried Cod my Mom would occasionally make for dinner. And I loved spaghetti but hold the raw tomato. However, sometime during college that all changed, and tomatoes were not an enemy. I will never turn down a summer fresh ripe tomato now. Slice and add a little salt and pepper…YUM! Or make a fresh corn and tomato salad with steak…so good!
So, when I saw the tomatoes in the basket Jenna drop at our backdoor, I immediately wanted a BLT-A. Mind you, I am not a BLT connoisseur, I don’t order them out ever or make them at home. But these beautifully ripe tomatoes screamed the purity of a BLT…and I had to add the A (avocado).
Needless to say, the sandwich did not disappoint! (Please forgive my amateur photos, I didn’t have Maddison here to take them and make them gorgeous.) Before summer leaves us again, get out to your local farmers market and pick up some fresh summer tomatoes!
