Artichokes
Serves 2 or Several for Appetizer
INGREDIENTS
FOR THE ARTICHOKES
2 large artichokes, trimmed *see below for trimming instructions.
4 cloves garlic
2 glugs of olive oil
1/2 lemon, cut in half
Salt and pepper
FOR THE AIOLI
1/2 lemon, juiced
1 clove garlic, zested
1 T dijon mustard
1/2 C mayo
Salt and pepper to taste
DIRECTIONS
Trim artichoke-cut off the stem close to the leaves at the bottom. Then cut off the top of the artichoke about 1/4 of the way down. I use kitchen scissors to cut off the top of the rest of the leaves prickles.
Place trimmed artichokes in a stockpot and fill with water halfway up the artichokes.
Squeeze lemons over the artichokes and put lemons in the pot.
Roughly chop the garlic and sprinkle over the artichokes.
Then over the top of each artichoke, pour a glug of olive oil. Season with salt and pepper.
Bring artichokes to a boil and reduce to a high simmer.
Cook for 45-50 mins. Leaves should pull off easily and meat should be tender.
AIOLO
Mix all ingredients well. Dip your artichokes in it! Yummy!
