Crispy BBQ Chicken Salad

Prep time 30 minutes

INGREDIENTS

  • 2 lbs fried chicken tenders (store-bought in the deli)

  • 2 heads of romaine, washed and torn into bite size pieces

  • 1 pint of cherry tomatoes, halved

  • 1 can black beans, drained, rinsed, and dried

  • 1 ⁄ 2 red onion, diced

  • 2 avocados, large dice

  • 1 recipe of ranch dressing, see website under “dressing” 

  • 1 ⁄ 2 c your favorite BBQ sauce, I use “Sweet Baby Rays”

DIRECTIONS

  1. Make the ranch dressing. This can be made ahead and will keep in the fridge for up to 3 weeks.

  2. Add the BBQ sauce just before tossing salad.

  3. Wash and dry all the produce.

  4. Drain and rinse the beans and dry in a paper towel.

  5. Chop all vegetables and place in a large salad bowl.

  6. Chop chicken in bite size pieces and add to salad.

  7. Add half the dressing and toss to coat. Add more dressing as needed.
