Crispy BBQ Chicken Salad

Prep time 30 minutes
INGREDIENTS
2 lbs fried chicken tenders (store-bought in the deli)
2 heads of romaine, washed and torn into bite size pieces
1 pint of cherry tomatoes, halved
1 can black beans, drained, rinsed, and dried
1 ⁄ 2 red onion, diced
2 avocados, large dice
1 recipe of ranch dressing, see website under “dressing”
1 ⁄ 2 c your favorite BBQ sauce, I use “Sweet Baby Rays”
DIRECTIONS
Make the ranch dressing. This can be made ahead and will keep in the fridge for up to 3 weeks.
Add the BBQ sauce just before tossing salad.
Wash and dry all the produce.
Drain and rinse the beans and dry in a paper towel.
Chop all vegetables and place in a large salad bowl.
Chop chicken in bite size pieces and add to salad.
Add half the dressing and toss to coat. Add more dressing as needed.
