Roasted Chicken Salad
2 servings/30 minutes
INGREDIENTS
2 cups leftover roaster chicken, small bite sized pieces
1 rib celery
2-3 green onion stalks
1/4 red pepper
1 T parsley
1 T dijon mustard
1/4 cup mayonnaise
DIRECTIONS
Chop all ingredients into small pieces and mix into a bowl with the chicken. Add dijon and mayo to taste. Serve on a baguette, lettuce cups or as a wrap.
