Roasted Chicken Salad

INGREDIENTS

  • 2 cups leftover roaster chicken, small bite sized pieces

  • 1 rib celery

  • 2-3 green onion stalks

  • 1/4 red pepper

  • 1 T parsley

  • 1 T dijon mustard

  • 1/4 cup mayonnaise

DIRECTIONS

Chop all ingredients into small pieces and mix into a bowl with the chicken. Add dijon and mayo to taste. Serve on a baguette, lettuce cups or as a wrap.
