Camp Sammies

As a family we go to Priest Lake, Idaho for a week every summer. It’s a magical place for us. My husband’s family has been going there for years. For the last few years we have been renting a spot that we love! A piece of property with a big, beautiful sandy beach and the some of the best sunsets I’ve ever seen. This was our last year there as the family has sold the property...we enjoyed every minute of being there for the last time.

One of our favorite traditions for breakfast is my husbands “Breakfast Sammies.” We do them at home (recipe on the website) but for some reason they are best at the lake. We use our electric non-stick griddle and my husband works his magic!

For 6 Sammies here’s what he uses:

  • 6 english muffins

  • 6 slices bacon

  • 8 large eggs

  • 6 slices cheddar cheese

  • Butter for the muffins

He cooks the bacon first and then adds the buttered muffins and browns them in the bacon grease. While those are browning he scrambles the eggs in a bowl and seasons with salt and pepper. Once the muffins are done, he puts them in foil to keep them warm. Then he adds the eggs. Using a rubber spatula he cooks them and divides them into 6 round patties. When the eggs are almost cooked through he adds the cheese, bacon and top of muffin to get the cheese melted. Once the cheese is melty add the bottoms and serve. Delicous!

Cooking outside is fun and a family affair for us! But when the week is over we are ready to get home to a warm shower and sand free feet!
