Crispy BBQ Chicken Salad

My oh, my! This salad is a crowd pleaser!! I’ve been making it for a couple of years now. I use the deli crispy chicken tenders from my grocery store…it’s the key ingredient. Every time I make it, I usually get a call the next day asking for the recipe. So, I felt it was blog worthy.


Last night we celebrated my mom’s birthday with a birthday cruise around the sound and I made this salad. It’s the perfect “prep” ahead meal. The funny thing is the first time I made it for her she was not impressed by my store-bought bag of fried chicken tenders. She turned her nose up at the fact that they were store bought and dear God…FRIED chicken tenders! You see my mom is a bit of a purist. She’s the mom who NEVER bought Twinkie’s or Wonder Bread. We only got soda in the summertime and that was limited. I mean, we were deprived of all the good stuff! Thank goodness I had friends with mom’s who bought junk food. (And of course, I am now thankful my mom had the good sense to feed us the healthy stuff.)

This salad makes a lot, so its great for a crowd. Serve it with tortilla chips for an extra crunch. If you have leftovers, use burrito size flour tortillas to make wraps. They make an excellent next day lunch.
