Leftovers
After a big weekend of cooking, leftovers are on my mind…
I know leftovers can be controversial, but our family happens to like them. I don’t get it when people don’t like them. My husband and I fight over them for lunch, or I repurpose them into another meal.
I get teased a lot for “cooking for an army.” I do come by it honestly; my mom and dad entertain a lot, or we have large family gatherings and there are always lots of leftovers. My mom used to pack my lunch every day when I was in school. So I often, I would get leftovers, my favorite was Chinese Chicken and Noodles, yummy!!
Last weekend for Father’s Day our families all got together and of course there were leftovers. Yay for me!
Our menu was:
Brunch Burrito’s
Potato, gruyere, bacon frittata
Charcuterie board with cheese, salami, prosciutto, avocado toast, and crackers
Pumpkin bread and cheesecake bites
Fruit and yogurt
Italian salad

We saved all of it and it was gone by the end of the next day! I find this is helpful when my teenage kids get hungry. I don’t keep a lot of packaged foods at our house, they generally have to prepare food when they are hungry, or I do it for them. So, it’s helpful to have leftovers in the fridge.

In my humble opinion there is no reason to waste leftovers. I know they can seem boring to eat the same thing again but sometimes the flavors are even better the next day. So, give it a try…choose one of our recipes and double it to ease your cooking load during the week.
