Beat the Heat, Eat Cool!

If you live in the Pacific Northwest, you are very aware we’ve just made it through a serious heat wave! Yikes, it was hot! It got me thinking about what I like to eat and drink when it’s summertime and hot. A few of my favorites are on the website and easy! You don’t have to spend a lot of time prepping to get something that will satisfy you in the heat.

My “go to’s” for quick and easy summer meals are:

Roasted Chicken Salad- I make it on Thursday or Friday before the weekend and serve with butter lettuce leaves. Leave it in the fridge and snack on it whenever. Then nobody has to ask you “what’s for lunch?”

Artichoke’s- These are great cold or at room temperature. Pair it with some grilled chicken and you have a meal.

Marinated Flank Steak- Easy peasy! Marinate on day, grill the next. Serve off the grill, at room temperature or slice and put in the fridge to snack on later.

Yumi Noodles- First, I can eat these noodles, cold, hot, or room temperature. They are just delicious. They go great as a side for the Marinated Flank Steak or just by themselves. A great make ahead side that can sit in the fridge until you’re ready to serve them.

Vinaigrette- Make a batch of my vinaigrette salad dressing and keep salad greens on hand to toss and serve with the flank steak or better yet make it a flank steak salad. Add some red onion, avocado, tomato, and blue or parmesan cheese. Now you’ve got a meal!

To quench my thirst, I’ve been drinking a lot of my Limoncello Mock-tail Cocktail. It’s so refreshing! You can use whatever flavor bubbly water you like and add a little booze to it if it suits you. A great way to cool off on a hot day!

When it’s hot out its best to keep it simple and use ingredients that can be served cold or at room temperature. This is why these recipes are some of our favorites. They are versatile, easy and crowd pleasers!
