Quinoa Bake

INGREDIENTS

  • 1 lb ground meat (I use turkey)

  • 1 onion, diced

  • 1 red pepper, chopped

  • 2 cloves garlic, diced

  • 1 can black beans, drained/rinsed

  • 1 small can green chiles

  • 1 ½ c salsa

  • 1 c stock, chicken or vegetable

  • 2 t granulated garlic

  • 2 t granulated onion

  • 1 t cumin

  • ½ t oregano

  • 1 t S&P

  • 1 c uncooked quinoa

Preheat oven to 350°

DIRECTIONS

  1. In a dutch oven or large skillet with a lid, sauté onion and red pepper over med-high heat unitl soft, add garlic and let cook for 30 seconds.

  2. Add in ground turkey half way through cooking turkey add in granulated garlic and onion, cumin, oregano plus salt and pepper, mix well.

  3. Once the meat is cooked through add beans, salsa, stock, green chiles and quinoa, mix well.

  4. Let it come to a boil on the stove then cover and put in the oven and bake for 45 minutes at 350° or until liquid is cooked out.

  5. Serve with shredded cheese and avocado!
