Mac & Cheese

Serves 8

INGREDIENTS

  • 1lb Elbow Macaroni

  • ½ c butter

  • 2/3 c flour

  • 4 c whole milk

  • 2 c Beecher’s Flagship cheese

  • 1 c grated parmesan

  • 1 T Dijon

  • Salt & pepper to taste

DIRECTIONS

  1. Boil water and salt the boiling water.

  2. Cook the macaroni, for a few minutes less than the package instructs.

  3. In a heavy bottom dutch oven melt butter on medium low, add flour and cook for about 8 minutes, stirring constantly.

  4. Pour in milk and whisk until it thickens.

  5. Add Dijon and cheeses.

  6. Take off heat and season. Add noodles and serve as is or in a buttered 9x13 pan and bake off later.
