Mac & Cheese
Serves 8
INGREDIENTS
1lb Elbow Macaroni
½ c butter
2/3 c flour
4 c whole milk
2 c Beecher’s Flagship cheese
1 c grated parmesan
1 T Dijon
Salt & pepper to taste
DIRECTIONS
Boil water and salt the boiling water.
Cook the macaroni, for a few minutes less than the package instructs.
In a heavy bottom dutch oven melt butter on medium low, add flour and cook for about 8 minutes, stirring constantly.
Pour in milk and whisk until it thickens.
Add Dijon and cheeses.
Take off heat and season. Add noodles and serve as is or in a buttered 9x13 pan and bake off later.
