Turkey Chili

INGREDIENTS

  • 1 lb ground turkey (93% lean)

  • 1 T oil

  • 1 yellow onion, diced

  • 2 cloves garlic, chopped

  • 1 can Original Rotel tomatoes

  • 1 28oz can/box crushed tomatoes

  • 2 T tomato paste

  • ¾ c chicken stock

  • 1 can black beans low sodium

  • 1 can kidney beans low sodium

  • Palm full of the following spices:

  • Granulated garlic

  • Granulated onion

  • Chili powder

  • Dried oregano

  • Dried parsley

  • Smoked Paprika

  • Salt and pepper to taste

DIRECTIONS

  1. In a medium size dutch oven or heavy bottom soup pot heat oil over medium high heat.

  2. Once hot-ish add onions and cook about 5. Add garlic and cook another minute.

  3. Add in ground turkey then add all spices and season with salt and pepper. Cook until turkey is browned.

  4. Add tomato paste and cook a few more minutes.

  5. Add chicken stock and scrape up bits from the bottom of the pan. Let chicken stock simmer for about 5-7 mins and cook down.

  6. Add all canned tomatoes and beans with liquid.

  7. Stir well to combine all ingredients.

  8. If chili is too thick add half a can of water.

  9. Let chili simmer for 30 minutes.

  10. Check for seasoning adding salt and pepper to taste.

  11. Serve with cheddar cheese, sour cream and sliced green onions.
