Roasted Garlic

Makes 1 small mason jar

INGREDIENTS

  • 1 c whole, peeled garlic with the ends cut off

  • Olive oil, enough to just cover the garlic

DIRECTIONS

  1. In a small sauce pan place garlic and cover with olive oil.

  2. Place on the stove with the burner on low.

  3. Let slowly simmer until garlic is toasty and tan. Be patient and don’t turn up the heat...low and slow is good. When the cloves are done they should mash easily.

  4. Remove from the oil and mash.

  5. Save the garlic oil in a mason jar. And then in another jar save the mashed garlic.

  6. Serve mashed roasted garlic at room temp.

**Store each in the fridge for up to 2 weeks.**
